Jira's field editability settings control who can edit which fields and when. This helps to ensure that data remains accurate and consistent throughout the issue’s lifecycle. You can edit field values based on:
Your role or permissions
The status of the issue
For example, some fields might be read-only and can only be modified by specific users or during certain workflow stages. Others might be editable by anyone with the appropriate permissions. Some fields can also be made mandatory to fill out before an issue can be transitioned to a certain status.

Permissions are applied to workflows in the same manner as it is applied to Jira issue view permissions.
Specific permissions will override general permissions when you edit field values based on your role, permissions, or issue status. For instance, workflow properties for a specific field, such as jira.permission.assign.denied, will override general workflow properties such as jira.issue.editable.
General workflow properties, such as jira.issue.editable, will override more general permissions for specific fields, such as assign permissions and global permissions.
